There are sugar cane farms all over in Hateruma island in Okinawa.Those
sugar canes grow along streets, competing with each other for their
heights under the sun.
In spring, when they are reaped, the sweet smell hangs in the air
and the sound of steam echos.
After sugar canes have a quality check, they are smushed, wringed,
and heated with lime. Kokutou is made from the crystallized top
clear layer of the stock.We use the kokutou from Okinawa to produce
our kokutou mitsu (burned Sugar Syrup).
